The Tissot family, who have been producing wine since 1956, have established themselves as a formidable presence in the landscape of Jura winemaking. Stéphane, the current Tissot in charge of the domaine, moved to Biodynamic production in early 2004. In his words: “When you’re Biodynamic, you have a different life in your vines, in your grapes, and in this way, you can make very easy wine. It leads you.”
This wine is an undeniable example of this type of winemaking. It bursts with aromas ranging from yeasty richness to lively notes of pear and lemon zest while still maintaining an underlying minerality. The color is a beautiful deep gold broken up by an energetic stream of fine bubbles. It is a full-bodied sparkler that would do well for nearly any occasion.
