This just in! Imbue Bittersweet Vermouth comes to us from the Great Pacific Northwest.
A collaboration by barkeep Neil Kopplin and winemaker Derek Einberger, this artisinally crafted fortified wine is made with Pinot Gris wine as the focal point. The wine is fortified with brandy made from the wine which was distilled at the mighty Clear Creek Distillery of Portland.
Botanicals, which were chosen to highlight the grapes natural flavor profile, are then macerated in the fortified wine. Vintage variations of the wine can yield slight differences in each batch of Imbue. Therefore, the botanicals may vary from batch to batch but the main aromatics are Egyptian Chamomile, Elderflower, Bitter Orange Peel, Sage leaf and Clove. The rest are a closely guarded secret!
The result? A vermouth that strikes just the right balance between bitter and sweet. Floral and citrus notes mingle with chamomile and sage on the nose. Entry is sweet on the palate and then has a lingering bitter finish.
